Based in Les Mesneux in the Montagne de Reims in the Champagne region, Jean-Philippe Trousset is a family-run house steeped in tradition, a true grower's champagne that produces high-quality cuvées of unparalleled elegance.

His philosophy is based on the belief that "the vineyard makes the wine," and he uses sustainable farming methods in all his vineyards. His wines are characterized by a supple yet strong flavor, with a mineral feel and delicate fruitiness.

The pairing menu, all paired with low-malt beer, will be provided by Chef Kawahara Sota, who is said to have "been the most delicious of all the people I've had cater for in the past."
