The grapes are destemmed and then transferred to conical wooden fermentation tanks (still not completely crushed) for 10-12 days of maceration at 22-25°C. During this time, the caps are manually pressed down several times a day using a pneumatic punch. After fermentation is complete, maceration continues for several more days, and the juice is then extracted using a traditional vertical press. The juice is then aged in 25hL wooden barrels for over a year before being bottled.

Tasting Notes
Ruby red in color. Delicate and very well-balanced nose. Red berry and floral nuances are clearly felt, and the minerality combined with the hint of a great wine. The structure in the mouth is firm, and it feels supple and elegant.

The grapes are hand-picked in small wooden boxes, then quickly transported to the winery, where they are hand-sorted on a conveyer belt, destemmed, and transferred to conical wooden barrels (without being completely crushed) for 10-12 days of maceration at 22-25°C.

The grapes are punched down several times a day using a machine. After fermentation, the grapes are macerated for several days and then aged in 25hL wooden barrels for 12 months.
