ブドウは除梗後、完全には破砕されない状態で円錐台形の木製発酵槽に送られ、22～25℃で約10～12日間マセラシオン。この間1日に数回、空気圧式のパンチャーを用いて手作業で果帽を押し下げる。発酵完了後さらに数日間マセラシオンを続け、その後伝統的な縦型プレスを使用して搾汁。25hLの木樽で1年以上熟成の後瓶詰め。

Tasting notes
Ruby red color with a delicate and well-balanced nose. Distinct nuances of red berries and floral notes are evident, complemented by a mineral quality that hints at its potential to develop into a great wine. On the palate, the structure is firm, offering a sense of suppleness and elegance.

Production

The grapes are hand-picked in small wooden boxes, then quickly transported to the winery, where they are hand-sorted on a conveyer belt, destemmed, and transferred to conical wooden barrels (without being completely crushed) for 10-12 days of maceration at 22-25°C.

The grapes are punched down several times a day using a machine. After fermentation, the grapes are macerated for several days and then aged in 25hL wooden barrels for 12 months.

About the Winery

Tornatore

Tornatore

The Tornatore family, owners since 1865 in Castiglione di Sicilia, have been working the vines and terroir at the foot of the Etna volcano since the 1930s. Today, the family owns 60 hectares of vines at an altitude of between 550 and 700 metres, making it one of the largest estates in the Etna DOC.
