【Bold, precise and finely drawn — a micro-négociant working couture-scale】
David Moret studied viticulture and oenology, then began his working life selling cellar equipment to the growers around him.
Those friendships became his foundation. In 1999 he bought his first barrels and launched his own label as a micro-négociant, working out of a small cellar in the centre of Beaune.
His fruit comes from the same parcels every year, farmed by five or six of Burgundy's most dependable growers, and he selects it by hand himself — taking pains to see that both vines and grapes are kept in the very best condition.
He specialises in white wine, and his bottles are known for their power, their boldness and their polish — qualities people are quick to say mirror the man's own cheerful character.
Intervention is kept to a minimum. The approach is natural and faithful to the terroir: the wines ferment in barrel and then age there for nine to twelve months.
Annual production runs to barely 7,000 bottles, centred on Meursault, Puligny-Montrachet and Rully, with a few celebrated Côte de Nuits villages besides.
Bettane+Desseauve, one of France's leading wine guides, calls Moret "an epicurean who makes rich, unfiltered whites", and rates him a four-star producer alongside Roulot and Etienne Sauzet.
He also ranks highly with Jancis Robinson, and his wines are poured in top restaurants in both France and Britain — a quietly brilliant Beaune address cherished by those in the know.
