After studying viticulture and oenology, he began his career selling oenology equipment to local producers.
David Morey founded the company in 1999. Building on his friendship with local wine producers, he bought his own barrels and launched his own brand as a micro-négociant (micro-négos) from a small cellar in the heart of Beaune.
He personally selects and sources his grapes from the same plots each year from five or six of Burgundy's most trusted growers, striving to maintain the vines and fruit in the best possible condition. His wines, specializing in white wines, are known for their intensity, boldness, and refinement, which are said to reflect his ebullient personality.
The wines are made with minimal human intervention and based on natural brewing methods that are faithful to the terroir.
After fermentation, the wine is aged in barrels for 9 to 12 months. The annual production volume is only around 7,000 bottles, mainly from Meursault, Puligny-Montrachet, and Rully, but also from the famous villages of the Côte de Nuits.
According to Bettane+Desseauve, one of France's leading wine review magazines, "Morey is unfiltered."
He is considered an "epicurean (gourmet) who produces rich white wines with a rich aroma," and is rated as a four-star producer alongside Roulot and Etienne Sauzet. He is also highly ranked by Jancis Robinson, and his wines are highly regarded for their reliable quality, and are sold in top restaurants in France and the UK.
He is loved as a hidden master of Beaune, known only to those in the know.
