By adopting the solera system, the wine combines the freshness of the youngest vintage with the complexity of the oldest vintage, creating a unique and harmonious flavor profile.

Tasting notes
Appearance: Deep yellow with gentle effervescence and a complex hue.
Aroma: Notes of yellow fruits followed by woody impressions and vanilla aromas.
Palate: Fresh and complex, with a pearlescent quality.

Pairing
Prosciutto (coppa, jambon cru, etc.), fish dishes with sauce, aged cheese

Production

Pressing: The juice is slowly and gently extracted from healthy, fully ripened grapes. After resting for 24 hours, the juice is allowed to settle.
Fermentation: Temperature-controlled between 16-20°C, maintaining low yeast activity to extract complex aromas. Malolactic fermentation is not carried out.
Barrel Aging: The aging period varies depending on the wine from each plot.
Clarification and Filtration: Unfined, unfiltered, with no stabilization.
Perpetual Reserve Wine: A perpetual reserve wine, aged in large casks (similar to Sherry-style solera aging), using wine aged from 2006 to 2019.
Dosage: 4g/L (Extra Brut)
Aging: 18 months in oak barrels, followed by 3 years of bottle aging.

Champagne Follet-Ramillon owns 4.5 hectares of vineyards in the Vallée de la Marne and the Montagne de Reims. The vineyards, located to the south and southwest of the Marne Valley, are planted with Meunier grapes and benefit from the morning dew, providing ideal growing conditions. Chardonnay is planted on the hillsides and enjoys ample sunshine, providing ideal conditions for ripening. Located in the northeast of the Montagne de Reims, Villedemange is the ideal terroir to express the finesse and minerality of Pinot Noir and Meunier.
