Tasting notes
The aroma is clean and delicate. It has a very strong fruity nuance, with sharp green apple and citrus notes, complemented by fresh floral nuances. When you put it in your mouth, the flavor spreads swiftly, and you can feel its vitality and dryness at the same time.

Pairing
It is a perfect aperitif for seafood dishes, fish salads, and other dishes dressed with extra virgin olive oil. It also goes well with crostini.

Production

Vinification:

  • Gentle pressing through non-contact skin method (off-skin method)
  • Primary fermentation: temperature-controlled using selected yeast
  • Secondary fermentation: Martinotti (Charmat) method
  • Clarification: 1-2 days
  • Yield: 13,500 kg/ha
  • Residual sugar: 8.0 g/L
  • Total acidity: 5.2 g/L.

Cultivation:

  • Method unique to this area, known as "Capuccina Modificata" → The branches of the grapevine are horizontally fixed to supports, based on the traditional Capuccina system. The positioning and height of the branches are fine-tuned to improve ventilation and sunlight exposure, reducing the risk of disease while promoting more uniform fruit ripening.

About the Winery

Bortolomiol

Bortolomiol

Bortolomiol is located in the heart of the Prosecco DOCG region, in Valdobbiadene. The long tradition of the Bortolomiol family as wine growers goes back to the 18th century and the Winery itself was founded by Giuliano Bortolomiol in 1949. Giuliano, considered a pioneer of the “Charmat” method, was the first to produce a Prosecco Brut in 1960. His dream was “to promote the quality and the awareness of Prosecco wine and make it a prestigious sparkling wine known throughout the world”. Nowadays the same spirit of innovation is carried on by his wife Ottavia, who runs the winery together with her four daughters (Maria Elena, Elvira, Luisa and Giuliana) to confirm the philosophy of the Brand: Quality of the product, a strong link with the territory, respect of nature and environmental sustainability.
