A wine that should be described more like those from the northern Rhône rather than Languedoc, with fruity and mineral flavors. It has a long finish and is one of the finest White wines from Languedoc.

Tasting notes
Aromas of white flowers and quince. Mineral effects from salt, crushed stone, peat, and quinine give this wine a stimulating and sparkling taste. The texture is smooth and the finish is refreshing.

White fish in cream sauce, hard cheese (Cantal)

Production

Cold clarification of the juice. Alcoholic and malolactic fermentation in barrels. Aged for 12 months in barrels, followed by 3 months in tanks.
