Founded in 2000, Le Conte des Floris is a small domaine farming around seven hectares in the Coteaux du Languedoc, spread across the communes of Pézenas, Caux and Gabian. The winery itself sits in the heart of the village of Pézenas, at the centre of the appellation. Since 2017 the estate has worked organically under Ecocert certification and biodynamically under Demeter certification.
Every parcel is farmed without pesticides, herbicides or fertilisers of any kind. The fruit is picked by hand into small 12kg cases and sorted where necessary. Pressing is done by hand on a vertical press, and the winemaking is kept as natural as possible: minimal sulphur, fermentation with indigenous yeasts. The wines spend at least a year in oak barrels and are then given further ageing in tank to settle into balance.
By intervening as little as possible in the vineyard and in the cellar, the domaine lets each terroir speak in its own voice. In the reds, that means planting whichever variety best expresses a given soil: Grenache on the Villafranchian gravels, Syrah on the Carboniferous schist, Carignan on the basalt.
The whites are built around Carignan Blanc, a long-overlooked variety that is superbly suited to the climate. It holds its natural acidity even at high ripeness, giving wines that never turn cloying.
Across this varied, fragmented patchwork of terroirs, the priority is always finesse and freshness rather than concentration or power. Wine, in their philosophy, is made to be enjoyed at the table.
