醸造
約20日間のマセレーション、天然酵母による発酵、ピジャージュは行わず、軽いルモンタージュのみ実施。
13〜15ヶ月間、1〜4回使用されたフレンチオーク樽で熟成。SO₂の使用はごくわずか。
