Production

Damoclé was born from the desire to isolate a specific terroir, in this case the Côte de Lépine in the village of Aminy. This terroir is one of the most emblematic of the so-called Sancerre appellation. The vines are given special attention throughout the year. Upon arrival in the cellar, this special care is intensified by fermentation and wood barrel ageing. The choice of 600 liters of Atelier Centre France demi-muids highlights the finesse, elegance and mineral purity that the Côte de Lépine brings. Steam-rimmed, fine-grained barrels accentuate this tension during tasting, expressing the terroir.
