Tasting notes
The unique characteristic of this cuvée lies in its unusual structure, blending three grape varieties that are typically never mixed. Roussanne combined with Chardonnay brings richness, freshness, and juiciness. Sauvignon Blanc perfectly harmonizes with this freshness and integration. Aromas of white fruits and toasted oak fill the nose. This is a full-bodied wine with a substantial feel, and while still young, it showcases the robust, full-bodied flavors that represent the Pays d'Oc. The finish reveals vibrant acidity."

Production

The grapes are softened by a brief, low-temperature soaking in large stainless steel vats. Fermentation occurs in new oak barrels. The Chardonnay and Roussanne are aged in new oak barrels for three months, while the Sauvignon Blanc is aged in large vats. The wine is bottled without filtration.

Domaine D'Aigues Belles

Domaine Aigues Belles was created in 1870. Just before 2000, Gilles Palatan decided, with the help of his 2 nephews Patrice and Thierry Lombard, to vinify his grapes instead of selling them to the local coop. This family-run domain opted for the cooperative in the years following the war. Vintage after vintage, Gilles has been ceaselessly improving the quality of his wines. Although part of his vines are classed as AOC, this talented wine producer has deliberately chosen the Pays d’Oc IGP denomination to benefit from greater freedom and produce the wines he loves. His wines all have a strong aromatic personality, freshness and great balance.
