The grapevines are planted on clay-limestone slopes at an altitude of 350 meters, and the pruning method used is Guyot. The yield is approximately 35hL per 1ha.
Owning & Enjoying

Tasting notes
The nose has fresh citrus aromas. The taste has hints of toasted walnuts. The finish is elegant with a pleasant bitterness.

Pairing
It goes perfectly with cheese and can also be enjoyed as an aperitif.

Production

The grapes are hand-picked in mid-September and carefully sorted in the field. To keep the grapes fresh, they are harvested in the morning.

The juice is directly pressed and cold-set and then packed into old barrels, so it may be aged for a year, but barrels are used sparingly. Malolactic fermentation takes place in barrels.

Only a light addition of SO2 (total SO2 content: less than 40 mg/L) is made at bottling. The wine is lightly filtered and may be slightly cloudy.

"There's not much in the Haute Vallée de l'Aude, apart from its magnificent natural surroundings. No industry, no urban development, apart from the memory of Catharism. It was in this unspoilt land that I planted my first vineyard, in 1983, on a rugged hillside at an altitude of 400 metres," explains Marc Leseney, when we meet at the Millésime Bio 2023 trade fair.
