The taste is sophisticated and pleasantly fruity, with aromas of citrus and exotic fruits. It has a slight sweetness, well-balanced, and a velvety texture on the palate.

Production

Vinification:

  • Gentle pressing using the skin-contact-free method (off-skin method).
  • Primary fermentation: Conducted at low temperatures using ancient yeast that has been in use since the 1970s.
  • Secondary fermentation: Conducted using the Martinotti (Charmat) method.
  • Yeast contact lasts approximately 90 to 120 days, with daily batonnage performed twice to keep the sediment suspended.
  • Yield: 13,500 kg/ha.
  • Residual sugar: 15.0 g/L.
  • Total acidity: 5.8 g/L.

Cultivation:

  • Vineyard: Colle di Corà.
  • Harvest: September 15 to 30.
  • Training method: A unique local technique known as "Capuccina Modificata," where the grapevine branches are horizontally fixed to stakes. This method is based on the traditional Capuccina training, with adjustments to branch arrangement and height to improve ventilation and sunlight exposure, thereby reducing the risk of disease while promoting more uniform fruit ripening.

About the Winery

Bortolomiol

Bortolomiol is located in the heart of the Prosecco DOCG region, in Valdobbiadene. The long tradition of the Bortolomiol family as wine growers goes back to the 18th century and the Winery itself was founded by Giuliano Bortolomiol in 1949. Giuliano, considered a pioneer of the “Charmat” method, was the first to produce a Prosecco Brut in 1960. His dream was “to promote the quality and the awareness of Prosecco wine and make it a prestigious sparkling wine known throughout the world”. Nowadays the same spirit of innovation is carried on by his wife Ottavia, who runs the winery together with her four daughters (Maria Elena, Elvira, Luisa and Giuliana) to confirm the philosophy of the Brand: Quality of the product, a strong link with the territory, respect of nature and environmental sustainability.
