Overturning the conventional wisdom of La Mancha, Spain, he is now attracting the attention of professionals from around the world.
Bodegas Verum .
The wines they produce are surprisingly clean, refined and high-quality, a departure from the traditional image of La Mancha as a vast, mass-produced region. With high-altitude vineyards and a harsh continental climate, their style of maximizing the purity of the terroir speaks volumes about the new possibilities of La Mancha.
Brewer Elias Lopez Montero was in attendance at this Maker's Dinner.
In 2018, he was selected as one of the "10 young winemakers shaping the future of Spanish wine" by the prestigious British wine magazine Decanter , and in 2021 he was named the world's best wine producer by Germany's Respected by Gaggenau , further solidifying his reputation internationally.
Then, in February 2026, at Barcelona Wine Week , Master of Wine Jancis Robinson selected Verum's flagship Las Tinadas Special Cuvée as one of the "Six Wines that Represent the Present and Future of Spanish Wine."
This is not just an award, but it means that the wine has been presented to the world as a vision of the future of Spanish wine.
A once-in-a-lifetime course tailored just for this occasion
The cuisine is based on spring ingredients and is created with a free-spirited approach that is not bound by any particular country or genre.
To bring out the best in each wine, we will prepare a special course meal tailored just for this evening.
Airen has delicate acidity and transparency, while Cencibel stands out with the unique characteristics of each plot.
The experience of getting close to each piece and experiencing the layers of aroma, temperature, and texture is truly the joy of a Maker's Dinner.
By tasting the wine while listening directly to the producer's words, the world inside the glass becomes even more three-dimensional.
