樹齢: 20年〜25年
土壌: ジュラ紀上部、キンメリジャン層中・上部、80mの石灰岩と化石を多く含む泥灰土が交互に層をなし、赤色化石泥土が優勢。
立地：北向き、南／南西向きの斜面、標高：約270m
栽培方法: 有機農法・ビオディナミ農法（ECOCERTおよびDemeter認証）
平均収量: 45hL/ha

醸造
全て除梗。約20日間のマセレーション後、マロラクティック発酵を行い、その後9～10ヶ月の間、シュール・リーでの熟成を行う（全てタンクで熟成）。
