【A young winemaker carving out a place of his own in the Terrasses du Larzac】

Saint Sylvestre is the domaine of Vincent Guizard, one of a new generation of growers in the Terrasses du Larzac. With his wife Sophie, Vincent farms just under twenty acres of fine vineyard within the appellation.

The area is known for a climate all its own, warmed by the Mediterranean yet cooled on summer nights by air spilling down from the Larzac plateau. That combination gives wines that are fresh yet delicate, with silken tannins and the garrigue aromatics that mark out the Languedoc.

Vincent grew up working the vines alongside his grandfather. In the late 1990s he made several vintages under the celebrated Olivier Jullien at Mas Jullien in Montpeyroux. From 2003 to 2010 he was co-owner of Domaine de Montcalmès with Frédéric Pourtalié. Then in 2010 he decided to leave Montcalmès, taking seventeen acres of vines with him to found Domaine Saint Sylvestre. The first vintage was released in 2011.

Vincent and Sophie farm sustainably, working in step with nature. Not a trace of synthetic fertiliser or herbicide goes into the vineyard, and every fermentation runs on wild yeasts.
