[A young winemaker establishing a new position at Terrasses du Larzac]
Saint-Sylvestre is the domaine of new generation winemaker Vincent Guisard of Terrasses-du-Larzac. Together with his wife Sophie, Vincent cultivates just under 20 prime acres in the appellation.
The region is known for its unique climate, which benefits from the warming influence of the Mediterranean Sea and the cool air that blows down from the Larzac plateau on summer nights, resulting in wines that are fresh yet delicate, with silky tannins and aromas of the garrigue that are so characteristic of the Languedoc.
Vincent grew up working in the vineyards with his grandfather. In the late 1990s, he worked for the renowned Olivier Julien at Mas Julien in Montpeyroux, where he participated in several vintages. From 2003 to 2010, he was co-owner of Domaine de Montcalmes with Frédéric Pourtallier. In 2010, Vincent decided to leave Montcalmes, take 17 acres of vineyards with him, and found Domaine Saint-Sylvestre, whose first vintage was released in 2011.
Vincent and Sophie practice sustainable farming and an approach that is in line with natural principles: they do not use any synthetic fertilisers or herbicides in the fields and all fermentation is carried out using wild yeasts.
