One of the typical outstanding wines from the Languedoc region. It features ripe Red fruits and a complex aroma of leather. The wine has rich and robust flavors with spicy elements and herbal notes reminiscent of the garrigue. It exhibits a well-balanced acidity.
Owning & Enjoying

Tasting notes
A powerful aroma: Complex with hints of leather and burnt wood, it showcases prominent notes of black fruits, fresh bread, brush, and exotic spices. The fruit nuances develop further in the air. The mouthfeel is very concentrated, packed with aromas of spices and roasted fruits. The juicy acidity and rich tannin levels of this wine are outstanding. Although it is young, it was a lot of potential.

Pairing
Grilled or roasted red meat, game, and charcuterie

Production

terroir
90% pebble, 10% limestone

viticulture
Organic farming methods, goblet pruning, topping young shoots, leaf thinning, dividing the vineyard, and hand harvesting.

Vinification
The process of removing the grape stems. Each variety is vinified separately. Natural yeast is used, and the fermentation takes place over an extended period of 35 days in stainless steel tanks, allowing the liquid to soak and soften. The wine is then aged for 24 months in Burgundy wooden barrels.
