Tasting notes
This wine exhibits a complex and powerful profile, offering sensations of herbs, spices, and rocky minerality alongside aromas of apple, peach, mint, watermelon, and fennel. The mouthfeel is rich, creamy, and oily, bursting with juicy flavors of peach and apple, complemented by lime, shrubbery, herbs, and spices. The acidity from lime and the mineral notes intensify, creating a refreshing sensation that fills the palate while maintaining its complexity.

Production

The soil composition consists of 90% limestone and 10% clay-limestone. Grapes are cultivated using organic farming methods, employing Goblet pruning, bud thinning, and leaf thinning, with hand harvesting. During vinification, whole clusters are directly pressed. Wild yeasts are used for fermentation, followed by aging in Burgundy barrels for 12 months.
