Domaine de L'Evêché owns 14 hectares of vineyards on multiple appellations: Mercurey, Bourgogne Côte Chalonnaise, Crémant de Bourgogne, Côte de Bourgogne, Bourgogne Aligoté. Most of the production is Pinot Noir (80%) and Chardonnay (15%) and Aligoté and Gamay (5%).
They are particular about pesticide-reduced cultivation and have cultivated the land carefully with machines for generations.
They choose the traditional winemaking method and vinified in temperature-controlled stainless steel tanks separately for each compartment. Subsequent aging is done in tanks or French oak barrels.
