Climat: En Reviller (St Denis de Vaux)
Soil: Clay-limestone hills, plots surrounded by dry stone walls
Field area: 1.5ha

Winemaking
After harvest, the grapes are sorted, lightly pressed, and clarified at low temperature before being transferred to barrels.
Alcoholic fermentation and aging takes place in 500-liter oak barrels (30% new) for 11 months.
Malolactic fermentation is carried out 100%.
Lightly filtered and bottled in August 2024.

Domaine de L'Evêché owns 14 hectares of vineyards on multiple appellations: Mercurey, Bourgogne Côte Chalonnaise, Crémant de Bourgogne, Côte de Bourgogne, Bourgogne Aligoté. Most of the production is Pinot Noir (80%) and Chardonnay (15%) and Aligoté and Gamay (5%).
