The vines are 35 years old. Ruby red in color, transparent and vivid. Rich aroma of red fruits. Soft, smooth, supple and silky tannins. A fruity wine that can be enjoyed from a young age.

Tasting notes
Bright ruby colour with a peony-like shine.
The wine offers aromas of freshly harvested grapes, black tobacco and wild blackberries.
When you put it in your mouth, the flavor spreads in harmony with the aroma, and you can feel the firm structure and silky mouthfeel.
The finish has a pleasant bitterness and a slight sweetness, with a smooth, linen-like texture.
It has a subtle yet profound appeal with flavors reminiscent of cinnamon and cranberry.

Cultivation

Soil: clay-limestone, altitude 240-350m
Vineyard characteristics: Selected from the best plots in the village of St Denis de Vaux, owned by the winery
Area: 8ha
Average age of vines: 35 years

Winemaking

After sorting, the grapes are destemmed and then poured into tanks using gravity.
After a pre-fermentation maceration at low temperature, the wine is subjected to alcoholic fermentation with two weeks of skin maceration.
Malolactic fermentation is carried out 100%.
After aging for 10 months in stainless steel tanks, it will be filtered and bottled in May 2023.

Domaine de L'Evêché owns 14 hectares of vineyards on multiple appellations: Mercurey, Bourgogne Côte Chalonnaise, Crémant de Bourgogne, Côte de Bourgogne, Bourgogne Aligoté. Most of the production is Pinot Noir (80%) and Chardonnay (15%) and Aligoté and Gamay (5%).
