A very unique wine made from the rare Carignan Blanc and Roussanne grapes. The excellent acidity and minerality bring out the richness and sweetness. One of the most complex White wines in the Languedoc region.

Tasting notes
The intense aroma of roasted sesame, with a rich and powerful palate, balanced by excellent acidity and minerality. The finish is long and complex, leaving a stimulating and lingering impression.

Pairing
White fish in cream sauce, scallops with white pepper, tuna tartare in olive oil, veal and lamb pancreas with mushrooms, hard cheese (Cantal)

Production

The juice is clarified at low temperatures, alcoholic fermentation and malolactic fermentation are carried out in barrels. The wine is then aged for 12 months in barrels (new barrels for Roussanne) and then for 3 months in tanks.
