[Pure and transparent champagne]
Located in Trois-Puys in the Montagne de Reims, Perrine Bayette, daughter of Pierre Bayette, is the owner of this winery. She was trained by her ex-husband, Alexandre Chartogne, who is the head of Chartogne-Taillet, and continues to use the same winemaking methods as the Taillet family.
She is dedicated to using her talent to craft champagne, ensuring that each cuvée fully expresses the characteristics of the terroir.
The estate owns 3.65 hectares of Grand Cru vines, most of which are Pinot Noir vines over 35 years old, from Trois-Puys and Rilly-la-Montagne, with some Chardonnay from Verzenay.
Since 2010, the vines have been free of chemicals and machinery has been kept to a minimum, with two horses, Tarzan and Saumur, working the vineyards.
To achieve the purest possible champagne, no cultured yeast is used and only a small amount of liqueur is added. The champagne is slowly aged underground for 3 to 6 years, and then aged in the bottle for at least 6 months before being shipped.
