Production

Terroir
Calcareous clay, volcanic, siliceous clay pebbles

Viticulture
Grapevine cultivation using the Goblet method, plowing the soil, and leaf thinning. To maintain freshness, the grapes are harvested at night.


Vinification
Grapes are cultivated separately in each type of soil. A short pressing is conducted, or the grapes are destemmed before direct pressing. To preserve the fruit aromas, fermentation is carried out at temperatures between 15°C and 18°C. After fermentation, the wine is blended and then aged in large stainless steel tanks for 3 months.
