It features a bouquet with aromas of dark cherry and fruitcake, offering a fruity and beautifully complex profile, complemented by notes of rose and sweet baking spices. The aromas of dark cherry, raw meat, tar, and mixed spices create a complex and fragrant experience. On the palate, it is juicy with a silky-smooth, elegant texture and fine tannins.

Pairing
It goes perfectly with wild game such as salmon and venison. Cassoulet, duck meat with olives, charcoal-grilled steak, mushroom risotto, etc.

Production

The grapes are harvested by plot (clone) based on flavor and skin ripeness. Each clone is fermented separately after undergoing cold maceration to enhance pigment extraction, using a mix of traditional oak barrels and stainless steel tanks. The winemaking process is designed to promote the complexity, texture, and balance of the fruit. The wine is aged in French oak barrels and, after blending, is bottled unfiltered.
