vinification
The grapes are harvested at night to preserve freshness. They are pressed briefly or removed from the bunches before pressing. Fermentation takes place at a temperature of 15-18°C to preserve the fruitiness. The wine is then blended and aged for 3 months in stainless steel tanks.
