Each variety and each terroir is vinified separately. The Syrah undergoes a short maceration of one week at 22°C. The Cabernet Sauvignon undergoes a long maceration of three weeks at 29°C, followed by pumping and punching down. The wine is blended after the winter, then aged in concrete tanks before being bottled in the spring. It has a garnet red color. The aromas are red fruit, cassis, and cocoa. The taste is deep and mellow.

Technical Data

The grapes are vinified according to soil and grape variety. The grapes are separated from the bunches.

The Syrah undergoes a short maceration of 7 days followed by a cold fermentation at 22°C.

The Cabernet is macerated for three weeks and fermented at 29°C. The juice is then remontaged and racked.

After fermentation, the wine is blended and aged in stainless steel and concrete tanks before being bottled in the spring.
