This cuvée, born from a single plot in the Grand Cru village of Ay, embodies the essence of Céros. It combines power and tension, with complex aromas of citrus and aging that are layered one on top of the other. The deep minerality and long finish create a unique character.

Tasting notes
A rich aroma that combines the strength of black grapes with the tension of a single plot.

Layers of blackberry, cocoa, roasted nuts, smoke and honey are present, with brioche and dried flowers emerging as the glass opens.

The mouthfeel is extremely concentrated, with firm acidity and powerful minerals forming the structure.

The aftertaste is long-lasting with bitter orange and salty flavors. It has an overwhelming energy and a tense style that is typical of Ceros.

Brewing: Barrel fermentation and barrel aging (mainly old barrels)
Malolactic fermentation: not performed
Aging: Long-term aging on the lees, followed by secondary fermentation in the bottle with natural yeasts
Dosage: Very dry (equivalent to Extra Brut)
Style: Blanc de Noirs (single vineyard)
Characteristics: Minimal SO2, plot management, thorough vineyard management that goes beyond lutte raisonnée
