brewing
The grapes are hand-sorted, destemmed, and then gently pressed. Fermentation and aging are carried out in temperature-controlled stainless steel tanks, using natural yeasts. No batonnage (lees stirring) is performed, and the wine's condition is constantly monitored through tasting. Only minimal amounts of SO₂ are used during vinification and aging, with adjustments made at bottling as needed.
