This wine is characterized by its rich grapefruit flavor and minerality. It has a long finish with a hint of saltiness.

Pairing

Production

Cultivation: Traditional methods are used, without herbicides or synthetic chemicals. The grapes are hand-harvested and transported in small wooden boxes, with a systematic sorting table used for selection.

Vinification: The wine is pressed slowly and aged in barrels only, with regular stirring of the lees until malolactic fermentation is complete. After 12 months of aging in oak barrels (25% new barrels, 25% one-year-old barrels, 25% two-year-old barrels), it is further aged in tanks for 4-6 months. After clarification and light filtration, it is bottled on-site at the domaine.

Domaine Antoine Olivier was created in 1967. Until 2003, it was Hervé Olivier who ran the estate before handing over to his son Antoine. In the vineyard, the estate practices plowing and reasoned control in order to use as few treatments as possible.
