This wine, produced from vineyards on steep slopes facing directly south, adjacent to the Beaujolais region, is full of mineral character. It has aging potential and pairs well with a variety of dishes across different cuisines.

Production

Traditional methods are used, avoiding chemical herbicides and synthetic products. Grapes are hand-harvested, transported in small crates, and sorted using a systematic sorting table.

The pressing is done slowly. During fermentation, which continues until malolactic fermentation is complete, the wine is regularly stirred. It undergoes a long aging process of 18 months, with 12 months in oak barrels (25% new barrels) on the lees. After 6 months of aging in tanks, the wine is clarified and lightly filtered before being bottled on the estate.

Domaine Antoine Olivier was created in 1967. Until 2003, it was Hervé Olivier who ran the estate before handing over to his son Antoine. In the vineyard, the estate practices plowing and reasoned control in order to use as few treatments as possible.
