Made from 100% Trebbiano di Soave grapes grown on black volcanic soils, this cuvée is vinified in stainless steel tanks and terracotta amphorae, allowing its youthful vitality and unique style to freely express itself.

Production

Alcohol fermentation: in steel vats without the skins using natural yeasts
Maturation: in steel vats/terracotta amphorae for 10 months with its fine sediments

This variety has very ancient origins, already known in Roman times, and historically it was always cultivated in the hills of Soave, up until the 1980s, when the spread of international varieties unfortunately led to many uprooting of the local varieties.

Today, Balestri Varda is one of the few producers still growing this variety, and even fewer vinifying it as a 100% monovarietal. Balestri Varda loves this powerful and rustic variety, and since its founding has produced excellent cuvées of classic Soave blends with Garganega. In 2016, after years of experimentation, they created "Libertate", a 100% Trebbiano di Soave vinified in stainless steel tanks and terracotta amphorae.

Balestri Valda

Balestri Valda is a family-run winery, originally founded by Guido Rizzotto, and now lovingly guided by his daughter, Laura. Nestled in the volcanic soils of Soave, they grow local grape varieties such as Garganega and Trebbiano di Soave, producing wines with a true sense of place. Their commitment to organic farming is matched by a deep respect for biodiversity, and even includes caring for bees. The basalt-rich soil imparts rich flavors and balance to the wines, while limestone in the ground adds a vital mineral mix for the vines. At the heart of their approach is a dedication to nature—no chemicals, only sustainable methods for their grapes and olives. The whole family is deeply involved, with Milena, Guido's wife and Laura's mother, offering her steady support and keeping the family in balance. This land has nurtured vineyards for centuries, and today, the hillside plots bask in sunshine, making the most of the region's warm climate. By carefully limiting the yields, they ensure that each bottle reflects the highest possible quality of their craft.
