The aroma is powerful and rich. The first nose combines notes of yellow peach, mirabelle and quince jelly. This is followed by floral notes of broom and acacia flowers. Finally, a touch of subtly sweet vanilla adds a wonderful complexity. The palate is full of elegance and delicacy, with a balanced sweetness and freshness, and a light saltiness.

The powerful and rich aromas blossom. First, you will notice yellow peach, plum and quince jelly, followed by floral notes and acacia flowers. Finally, you will notice hints of vanilla and sweet notes, completing the beautiful and complex aromas. The taste is elegant and sophisticated. It is balanced between mellowness and freshness, with a touch of saltiness.

Technical Data

Located on a south-facing slope at an altitude of 300 metres on the Chavanay plateau and in the village of Malleval

The grapes are hand-picked and sorted in the vineyard. The early-ripening Marsanne is harvested first, followed by the Roussanne. The pressing and débourbage are carried out at low temperatures.

Two fermentations then take place: one with wild yeasts at 15°C, and the other alcoholic and malolactic fermentation in oak barrels.

The Roussanne and Marsanne are aged separately in oak barrels for nine months, without batonnage (stirring), and then blended before bottling.
