Produced using a stricter version of the standard Ripasso method. In the winemaking process of Valpolicella Classico, wine that has undergone alcoholic fermentation is combined with the pomace of Amarone, allowing the remaining sugars to undergo fermentation once again.

As a result, this unique method yields fruity aromas and spicy nuances, along with balanced acidity and moderate alcohol content, producing an elegant and distinctive wine.

Production

Cultivation and Elevation: 120–350 meters. Located in the heart of Valpolicella Classico, it is distributed across San Pietro in Cariano, Fumane, and Negrar.

Method: Verona-style pergola—composed of sturdy wooden posts and beams, forming a roof-like structure over the vines.

Vinification: Grapes are hand-harvested, followed immediately by destemming and crushing. Temperature-controlled maceration is then conducted, followed by alcoholic fermentation and malolactic fermentation. In early March, the Valpolicella Classico wine is transferred over the pomace of Amarone for re-fermentation.

Aging: Aged for 6 months in 20hL Slavonian oak, followed by 6 months of bottle aging.

The Speri winery vinifies only indigenous Valpolicella grapes. In addition to the three traditional grape varieties, Corvina, Rondinella and Molinara, small quantities of lesser-known old varieties are used, such as Oseleta, Rossanella, Pelara and Cabrosina.
