Tasting Notes
Bright pale lemon yellow.

When you tilt the glass, the first thing that comes to mind is the fresh fruity aroma of white pear and green apple, followed by white flowers (lily of the valley and white peach petals), lemon peel, and a silky minerality that quietly spreads out.

When you put it in your mouth, the cool, sharp attack gradually gives way to the richness of the fruit, and the nuances of grapefruit and yellow peach carry over into a pleasant aftertaste.

The minerals give it a solid structure, and the finish is long and lingering with a slight saltiness.

Technical Data

Terroir/Vineyard information: Located in the plot "Les Noëls de Montbenault". The soil is a rocky subsoil containing grey-blue shale and rhyolite, a volcanic rock.

Cultivation: Organic/Biodynamic (certified organic and biodynamic practices), hand-harvested. Low yields, carefully selected.

Brewing and aging: Natural yeast (indigenous yeast) is used. Aging is done in wooden barrels (fûts).

Aging period: 18 months. No collage/no filter.
