The grapes are cultivated in clay-loam soil vineyards facing the sea, consistently impressing with their outstanding ripeness each year. By exercising utmost care and consideration in the handling of the grapes both in the vineyard and the cellar, each vintage develops its unique personality, making this wine a great representative of the Ars Magna series.

Tasting notes
Color: Bright ruby ​​red. Aroma: Deep and wild bouquet, intense notes of ripe red fruit, Mediterranean shrubs, china bark, rhubarb, and ferns on a warm mineral base. Taste: Very powerful, intense and calmingly fresh. Beautiful velvety tannins intensify the persistent and warm finish, highlighted by volcanic nuances.

Production

The grapes are hand-harvested, sorted, cleaned, and destemmed. The resulting grapes undergo a cold maceration for about 48 hours. Fermentation takes place in temperature-controlled stainless steel tanks and wooden barrels, followed by an additional 10 to 15 days of maceration. After pressing, the resulting wine is poured into new French oak barrels with fine pores, where malolactic fermentation occurs. The subsequent aging takes about 18 to 22 months, with regular stirring of the lees. Finally, the Cabernet Sauvignon is aged in the bottle for at least an additional 18 months.

The Ômina Romana winery is a family business founded in 2007 on the initiative of the Börner family. The choice of location for the business project was made in the Velletri area, about 40 km south of Rome, amidst the green volcanic hills of the Castelli Romani, overlooking the Tyrrhenian Sea.
