Tasting notes
Color: deep ruby ​​red
Nose: A powerful and captivating bouquet with aromas of small wild berries, exotic spices, chopped tobacco, cedar wood, and dried petals, alternating with thick accents of copse and rust.
Taste: This Merlot has a very elegant, full-bodied flavor. The soft glycerin structure gives it a perfectly balanced tannin texture, a powerful and impressive flavor profile, and a particularly long aftertaste that lingers in the mouth.

Pairing

Production

The wine undergoes cold maceration for about 48 hours. Fermentation occurs in temperature-controlled stainless steel tanks, followed by an additional 10 to 15 days of maceration. The wine, having undergone malolactic fermentation in oak barrels, is then placed in new French oak barrels with opened pores for aging, with frequent stirring for approximately 12 months. In the final stage of aging, each clone is blended together, and the Merlot is bottled and aged for a minimum of 12 months.

The Ômina Romana winery is a family business founded in 2007 on the initiative of the Börner family. The choice of location for the business project was made in the Velletri area, about 40 km south of Rome, amidst the green volcanic hills of the Castelli Romani, overlooking the Tyrrhenian Sea.
