Technical Data

Chardonnay: 1/4 aged in barrels, 1/4 aged in glass bonbonnes (large glass containers)

Pinot Noir: 1/4 barrel aged, 1/4 glass bonbonne aged

The Pinot Noir in particular has excellent saignée (separation of the skins and juice), and juice with an extremely high sugar content is selected.

Fine Champenoise (a distilled spirit from the Champagne region) is then added to create the liqueur (Ratafia).
