Tasting notes
The colour is clear and bright, with a sparkle that expresses the wine's youthfulness.
The nose is mild, with floral nuances and chalky minerality.
The palate is similarly mild, with a very delicate and slender impression.
It has a smooth texture and a salty finish.
Allowing it to air a little before drinking will allow the wine to fully express the terroir's elegance.

Pairing
Grilled scallops with citrus butter sauce, chicken stewed in cream sauce, sauteed asparagus with lemon and semi-hard cheese

Production

Harvested by hand on September 19, 2023, then directly pressed.
The fermentation is done in a 600L demi-muid, with no extraction whatsoever.
All are aged for 8 months in demi-muids, used 2-3 times, then transferred to stainless steel tanks for clarification by natural settling, followed by tartar stabilization and clarification with bentonite, then filtered through very fine filters.
It will be bottled on May 13, 2024, with 740 bottles produced.

Maison de la Chapelle

Delphine and Grégory Viennois, two native Burgundians, are returning to their roots with the creation of their wine merchant La Maison de la Chapelle. These two wine enthusiasts embarked on their adventure with their very first vintage in 2014. Delphine, who comes from a winemaking family, has always been associated with the great Burgundy houses. As for Grégory, an oenologist, he trained with some of the great names in Burgundy, including Domaine J. Prieur, de l'Arlot, Smtih-Haut Lafitte, M. Chapoutier, Ferraton Père & Fils and Stéphane Derenoncourt. Now back in Burgundy, running his own business, he is also technical director at Domaine Laroche in Chablis and consultant at Quinta Do Monte d'Oiro in Portugal.
