Tasting notes
A bittersweet, floral perfume with aromas of mixed cassis and blackberry, along with hints of mint. It is very juicy with a smooth texture, a delightful salinity that makes your mouth water, and lively minerals that refresh the palate. It undoubtedly tempts you to sip it slowly. The finish lingers with tannins and acidity, providing a long aftertaste.

Grilled steak, Saint-Nectaire

Production

The wine is destemmed and left to soak for 2-3 weeks to soften. Fermented with wild yeasts, it is aged for 20 months in tanks (29%), one-year barrels (6%), new oak barrels (10%) and used 1/2 muid barrels (55%). It is not stirred and is only lightly filtered.

About the Winery

Le Soula

In 2001 Gérard Gauby revealed that he had discovered some vines high up in the Agly valley (he had, in fact, discovered some abandoned vines in the Fenouillèdes). He told Roy Richards and Mark Walford of his discovery, which presented an opportunity for them to go into partnership. After some thought, Roy and Mark decided to commit to the venture, the reputation of Soula started to be established in 2001.
