Tasting notes
Aromas of ripe blueberries, spices, and herbs such as sage and thyme. Full of juicy fruit, with hints of smoke and gravel. Full of strong minerality like flint from schist soil, with a slightly spicy and subtle minerality. Also rich in glycerin, it has a mellow and soft taste, yet a beautiful vitality and indescribable freshness. The taste is salty and fruity, lingering on the palate.

Pairing
Duck or lamb confit lamb tagine.

Production

Whole bunches fermented in 24-45hL concrete vats with domestic yeasts. Aged for 9 months in large wooden and concrete vats, then aged again in bottle for 9 months.

Domaine le Roc des Anges

Roc Des anges was founded in Febuary 2001. A Carignan vine planted on a vein of quartz is biheind the origin of the name. a white soil surrounded by black schist: the “Lieu-Dit” is called “Roc Blanc” which translates as White Rock. Angels where chosen to symbolize the vein of quartz, and Roc Blanc became Roc Des Anges (Roc of the Angles).
