Pressing: Juices are fractionated according to their aromatic profile and ageing potential.

Fermentation: Inoculation then temperature control between 16 and 20°C to maintain low yeast populations and complex aromatic molecules.

Barrels ageing: Partial depending on the characteristics of the wines from each plot.

No fining, no filtration, nor accelerated stabilization.

Blending and bottling 8 to 9 months after the harvest.

Champagne Follet-Ramillon

Champagne Follet-Ramillon owns 4.5 hectares of vineyards in the Vallée de la Marne and the Montagne de Reims. The vineyards, located to the south and southwest of the Marne Valley, are planted with Meunier grapes and benefit from the morning dew, providing ideal growing conditions. Chardonnay is planted on the hillsides and enjoys ample sunshine, providing ideal conditions for ripening. Located in the northeast of the Montagne de Reims, Villedemange is the ideal terroir to express the finesse and minerality of Pinot Noir and Meunier.
