Tasting notes
Transparent and crystal-like color.
The aroma of white flowers and anise rises, and on the palate, citrus aromas, grapefruit and white peach flavors spread, with a fresh and salty taste.

Pairing
Bresse chicken, morels, truffles, mushrooms, hard cheese, and goat cheese.

Production

Whole bunches of grapes are used, then pneumatically pressed and left to sit at 7°C for 24 hours.
Fermented in 300L barrels.
Aged on lees for 7 months.

Terroir:The terroir is spread over three plots: La Mutte, which has sandy soils; La Louisiane, which has red clay and pebbles; and Les Prés, which is a limestone colluvium from the Fonds des Papes.
