Tasting notes
A fresh and aromatic wine. It has aromas of white flowers and white fruits, with a hint of toast. While voluminous, it remains crisp and has a smooth texture. The finish reveals delicate hints of salinity, leading to a beautiful and long-lasting aftertaste.

Pairing
Exotic white stew with shrimp and chicken in coconut milk; breast of veal with honey, cumin and bacon-glazed carrots.

Production

The juice is directly pressed, allowing fine solids to settle before extracting the clarified juice for fermentation in old barrels. Aged for 10 months in used barrels, with malolactic fermentation. The lees at the bottom of the barrel are not stirred

About the Winery

Domaine Julien Pilon

Native of the Rhône Valley, Julien Pilon spent more than 10 years working in Spain and Roussillon, learning winemaking in famous wineries such as Mas Amiel (Roussillon), Terra Remonta (Spain) and Jean Pierre Villa (Rhone). Julien Pilon described himself as a landless winemaker when he started on his own in 2010.
