The aroma features hints of pepper and a touch of violet characteristic of Syrah, beautifully blending with the freshness of Saint Joseph. The texture is smooth and soft, set against a backdrop of clarity.

Production

The grapes are destemmed but not crushed. Fermentation takes place in stainless steel tanks for three weeks. Malolactic fermentation occurs in 500-liter demi-muid oak barrels. The wine is aged for 18 months in demi-muid barrels, of which 35% are new.

Domaine Julien Pilon

Native of the Rhône Valley, Julien Pilon spent more than 10 years working in Spain and Roussillon, learning winemaking in famous wineries such as Mas Amiel (Roussillon), Terra Remonta (Spain) and Jean Pierre Villa (Rhone). Julien Pilon described himself as a landless winemaker when he started on his own in 2010.
