Lima is the last place Julien visited during his travels around the world. On a Sunday, he dreamed of making wine in the Northern Rhône region right there. This Saint-Joseph is full of energy, juicy, and packed with complex and pure fruit flavors. The name means "One Sunday in Lima."

Owning & Enjoying

Tasting notes
This wine features a rich and concentrated flavor with aromas of melon and citrus. It is medium to full-bodied, suitable for long aging. An attractive wine with a finish that lingers long and highlights sweet pear aroma.

Pairing
Pairs perfectly with eggplant caviar and crayfish terrine. It also goes well with capon (chicken), brandade of salt cod, and langoustine ravioli.

Production

The juice is directly pressed, and fine solids are allowed to settle before extracting the clarified juice for fermentation in old barrels. Aged for 10 months in used barrels, with malolactic fermentation. The lees at the bottom of the barrel are not stirred.

About the Winery

Domaine Julien Pilon

Native of the Rhône Valley, Julien Pilon spent more than 10 years working in Spain and Roussillon, learning winemaking in famous wineries such as Mas Amiel (Roussillon), Terra Remonta (Spain) and Jean Pierre Villa (Rhone). Julien Pilon described himself as a landless winemaker when he started on his own in 2010.
