For Sylvain Fadat, the recipe is simple: "We try to do everything with pleasure, knowing that our tool (ed. the terroirs of Montpeyroux) is good." It is clear that each of the cuvées from the Domaine d'Aupilhac harbors a soul and exudes an unusual energy, which leaves no connoisseur indifferent. His work is a real gem of Languedoc craftsmanship. As the native winemaker of this high-altitude village celebrates his thirtieth vintage, we can only admire the work accomplished, without concession, with the vines as the only priority. For the winegrower, convinced – and certified – by biodynamics, it takes a lifetime to understand and observe the best adaptation of grape varieties to the terroirs. It all started with the first plots inherited from his family, this terroir which named the estate. What audacity to have cleared this north-facing amphitheater, hidden in the middle of woods and scrubland, named ‘Cocalières’, where the refreshing altitude pleases the Syrah. Let’s not forget either the fight led 30 years ago by this passionate winegrower for Carignan, who expresses himself with accuracy on blue marls in the cuvée Le Clos. A whole range that has made us throb for a long time.
