Pairs well with pork and chicken, mussels, shrimp, roast chicken and potatoes, as well as grilled asparagus and Brussels sprouts. It also complements regional cheeses such as Delice de Bourgogne, Morbier, and Comte.

Production

Most of the brewing process is done by pump-overs only, with punch-downs toward the end to better control the final extraction. Whole bunches are used less than usual (about 10-15%). The fermentation period is relatively short (16 days), and malolactic fermentation is completed quickly.
