A wine with an unusual taste, the main variety being Mourvèdre. A complex impression with a very good balance of freshness and elegance. The aftertaste is long and thin. It has great aging potential.

Tasting Notes
This wine is mainly made of Mourvedre and has a very refined and elegant taste due to its long aging in egg-shaped concrete vats. The biggest difference between this wine and Bandol and other Spanish wines is that it has a dominant animal aroma and firm tannins. It has a rich fruit aroma and a very firm, mellow, ripe fruit flavor with just the right amount of tannins.

Braised or roasted red meat (beef tenderloin with porcini mushrooms)

Technical Data

Viticulture: Dry, stony clay-limestone soil. All vines are grown biodynamically, certified by Demeter. The soil is tilled and never fertilized.

Vinification: After manual sorting on a sorting table, the grapes are gravity fed into the tanks. No yeast is added. Traditional vinification with alternating cap maceration and pumping over. Maceration for 4-5 weeks. Air pressing.

Aged 36 months in egg-shaped concrete tanks. Unfined and unfiltered.

The Domaine was founded in 1992, transitioned to organic farming in 2002 and biodynamic farming in 2011. Today, it owns 17 hectares of vineyards and has grown its production from 2,000 to 55,000 bottles in 26 years.
