Tasting notes
This wine, predominantly Mourvèdre, has undergone long aging in egg-shaped concrete vats, resulting in an exceptionally refined and elegant character. Compared to Bandol and other Spanish wines, it stands out with its pronounced animalistic aroma and robust tannins. It offers a rich bouquet of fruit and a well-rounded, matured fruit flavor, with tannins that are firm yet balanced.

Braised or roasted red meat (beef tenderloin with porcini mushrooms)

Production

Viticulture: The vines are grown in dry, stony clay-limestone soils. All vines are cultivated using biodynamic methods certified by Demeter. The soil is tilled, and no fertilizers are applied.

Vinification: After careful hand-sorting at the sorting table, the grapes are transferred into tanks using gravity. No yeast is added. Traditional winemaking methods are used, alternating between cap punching and pump-overs. Maceration lasts 4–5 weeks, followed by pressing with a pneumatic press.

The wine is aged for 36 months in egg-shaped concrete tanks, with no fining or filtration.

The estate was created in 1992, start to be organic in 2002 and biodynamic in 2011. Today there is 17 hectares of vines. In 26 years his production involved from 2.000 bottles to 55.000 bottles a year.
