Organically grown Jacquerousse grapes are hand-picked from the southwest-facing "Les Châteaux" vineyard in Chignan. The 50-year-old vines are densely planted in silty, calcareous soils, ploughed by horse. Whole bunches are carefully selected, delicately pressed, and fermented in tank without the addition of sulfites. Natural malotic fermentation and 4 months of aging in tank.

Tasting Comments

Tasting Notes
The aroma has Alpine elements such as grass, white flowers, ripe apples, and almonds, and as it ages, a hint of iodine becomes noticeable. The taste is plump but refreshing, not too acidic, but with a strong minerality on the finish.
