Tasting notes
The wine has tannins and a slightly spicy character, with aromas of black fruits, cassis, and blackberry. When young, it offers fruity notes. With aging, the tannins become rounded, and the hint of forest underbrush become more prominent.

Charcuterie platter, roasted beef, french fries, Savoie cheeses (Tomme de Beauges, Reblochon, Abondance)

Production

Mondeuse's vineyard is mainly located on the lower slopes of the mountain overlooking Chignin, on clay-limestone soils and glacial moraines.


Despite the slope, these plots are manually weeded, pruned, and harvested. The vines are grown using organic farming practices with biodynamic principles.

Harvesting is done by hand from September 10th to 25th, with grapes carefully placed in 300 kg crates to avoid crushing. Grapes are hand-sorted, with 50% de-stemmed depending on the vintage.

Maceration without added sulfur dioxide lasts for 10 days, followed by 12 months of aging (30% in demi-muids). A small amount of SO2 is added at bottling if necessary, which is done according to the lunar cycle at the estate.

Domaine Denis & Didier Berthollier

In 1850, Louis Tissot established an agricultural farm in Chignin with very few vines, which were cultivated for the family's personal consumption. After the Phylloxera crisis in 1900, a few vine plants were replanted, and they are still cultivated today. In 1950, Victor Berthollier (paternal grandfather of Didier and Denis) was among the very first to commercially bottle their wine; at that time, it was more common to sell wine in barrels and bulk.
